Video Transcript: Meatloaf

 Hey there! I'm Chef Danni Bleil. Thanks for watching me on the Health E Cooking Show.

Get your taste buds ready. Over the next few months we'll be making recipes that are guaranteed to be fast, fresh and fabulous, not to mention good for you too! This month we're revamping the classic American meatloaf making it the easiest, tastiest meatloaf ever!

Growing up, it was always meatloaf Mondays. But unlike mom's meatloaf, this one is made with extra lean ground beef, and it's loaded with colorful vegetables, NOT bacon fat and grease. Let's get started.

First we'll combine the wet ingredients in a large bowl. Two tablespoons fat-free milk, 1 tablespoon ketchup, 1 tablespoon Dijon, 2 large egg whites.

This meatloaf is so delicious because we are making it with extra lean beef. It has only 178 calories per serving, where I think Mom's was more like 500 calories per serving.

Next I am adding those yummy vegetables: 1/2 cup chopped onion, 1/4 cup roasted red pepper, 1/2 cup steamed broccoli florets. You can subsitute frozen if you're in a hurry.

Some people think turkey meat loaf is healthier. It's not necessarily. When you cook with 93% lean beef, there is LESS saturated fat
AND less calories than most turkey meatloafs, plus this one TASTES like the real deal. 
But if you simply prefer the taste of turkey, make sure you buy ground turkey breast which is 99% fat-free.

Now I'm going to add the meat to the mixing bowl along with the bread crumbs, which I made by pulsing 1 slice of whole wheat bread in the food processor.

And last but not least, the flavorful herbs: 1 teaspoon basil, 1/3 cup parsley, and a few twists of pepper. We'll mix this gently but thoroughly, then turn it out into a loaf pan sprayed with cooking spray. Top with with a little more ketchup, then pop this into a 350-degree oven for about an hour.

So you can call mom, and tell her ditch the old recipe and give her a healthy meatloaf.
