Video Transcript: Lemon Vinaigrette
This time on The Health eCooking Show, we’re making a great salad dressing.
Hi I’m Mitch Prensky, and today we’re making a healthy lemon vinaigrette. My first ingredient for the lemon vinaigrette is a little bit of chopped shallot. If you don’t have chopped shallot, you can always use a little chopped onion. Fresh-squeezed lemon juice … little bit of fresh honey … and a couple of turns of freshly ground black pepper. As I’m whisking, I’m going to incorporate olive oil. You can use a really great extra virgin olive oil … if you can find it. If not, you can use a little bit of blended oil, whatever you have.
And there you have it.
This lemon vinaigrette is a really great item to make ahead. You can have it for the week, store it in your refrigerator. You can use it also as a marinade for chicken … shrimp … it’s very versatile.
